I’ve always loved egg drop soup. It’s one of those things that will make me feel better when I’m sick. It’s the combination of warm broth and soft, fluffy eggs. It’s like a hug in a bowl. Ingredients:

  • Low-sodium vegetable broth
  • Eggs
  • Cornstarch
  • Water
  • Soy sauce
  • mushroom seasoning
  • Green onions

Instructions:

  1. Add vegetable broth in a saucepan, then add frozen mixed vegetables (peas, carrots, corn, and green beans). Bring to a simmer.
  2. Whisk together the eggs and soy sauce, and set it aside.
  3. Add cornstarch, water, and mushroom seasoning in a small bowl, then slowly drizzle the cornstarch mixture into the simmering broth, stirring constantly.
  4. Cook for 1 minute; slowly pour in the egg mixture. 
  5. Stir and cook for 1-2 minutes or until the eggs are cooked. Please give it a taste now, and adjust it to your liking.
  6. Transfer to a bowl, garnish with green onions (optional).
  7. Serve immediately and enjoy!
