What You’ll Need:

Meatless sausages: are typically lower in saturated fat and cholesterol than traditional meat sausages. They are often made from plant-based ingredients. 

Protein Almond Milk: Fortified with additional protein, which is essential for muscle repair and growth.

Protein Pancake Mix: This blend allows you to start your day with a satisfying meal that tastes delicious and provides the essential nutrients to fuel your body and support your overall health and fitness goals.

Eggs:  Are considered a complete protein source, meaning they contain all nine essential amino acids

Cheddar Cheese: Has a smooth and creamy texture when melted, making it ideal for adding richness and creaminess. 

Sugar-Free Maple Syrup (or reg):  Sweetened with low-calorie or calorie-free sweeteners such as stevia or erythritol, which can help reduce overall calorie intake compared to traditional maple syrup.

Helpful Tips for Meal Prep:

1. Double or triple the batch: Make a larger batch of these muffins to have plenty on hand for meal prep throughout the week. Store them in an airtight container in the refrigerator and reheat them as needed.

– 1/2 cup Sharp Cheddar Cheese

– Sugar-Free Maple Syrup for Toppings

Instructions:

1. Preheat your oven to 350°F (175°C).

2. Microwave the meatless maple-flavored sausage patties for 30-45 seconds. Once cooked, chop them into small pieces. 

3. In a mixing bowl, prepare the Kodiak Protein Pancake Mix according to the package instructions, substituting water with almond milk for added protein, then add eggs.

4. Fold the chopped sausage pieces and shredded sharp cheddar cheese in the pancake mix.

5. Pour the pancake batter evenly into a silicone mold, or if unavailable, a greased muffin tin will do. This mixture makes 6-7 muffins.

6. Bake in the preheated oven for 20-25 minutes or until the muffins are golden brown and set.

7. Remove from the oven and let cool slightly before removing from the silicone mold or muffin tin.

8. Serve with a drizzle of sugar-free maple syrup on top.
