A brunch delight that’s easy to whip up and everyone can enjoy. So, to all my vegetarian friends, try this meatless, low-carb version of chicken and waffles.
Hey, brunch enthusiasts! Today, I’m thrilled to share a game-changing twist on a classic favorite – chicken and waffles – but with a meatless and low-carb spin for waffles. Enter the world of Avocado Chaffles featuring Gardein’s delicious Meatless Chick’n Tenders. Buckle up because brunch is about to get much tastier!
The Meatless Magic:
Let’s kick things off with the star of the show – Gardein’s Meatless Chick’n Tenders. These little wonders are a plant-based dream, perfectly crispy on the outside and tender on the inside. Plus, they’re a breeze to prepare, making brunch stress-free. Pop them in the Air-fryer, and their golden perfection is ready.
What You Need:
– 1 cup grated cheese (cheddar, mozzarella, or a mix)
– 2 ripe avocados
– 1 teaspoon of your favorite seasoning. I used creole seasoning (garlic powder, paprika, or your secret blend)
-4 pieces Gardein’s Chick’n tenders
How to Prepare it:
Now, let’s talk about those game-changing waffles – Avocado Chaffles. Picture this: a blend of creamy avocado, gooey cheese, and your favorite seasoning coming together to create a low-carb masterpiece. And the best part? Just three simple ingredients!
1. Cheese: Grate your favorite cheese: cheddar, mozzarella, or a mix for extra flavor.
2. Avocado: Mash up a ripe avocado and mix it with the cheese. This adds a delightful creaminess and a boost of healthy fats.
3. Seasoning: Add your go-to seasoning – a pinch of creole seasoning or garlic powder, a dash of paprika, or a sprinkle of your secret spice blend.
Easy-Peasy Preparation:
1. Chick’n Tenders: Pre-heat the air-fryer at 375F. Once ready, add the chick’n tenders. Air-fry for 13-18 minutes. While your chick’n are cooking, make the chaffles.
2. Chaffle Time: Pre-heat the waffle iron; in the meantime, prep the cheese and avocado. Once done, sprinkle some shredded cheese in the waffle iron, add 1/2 of the avocado and your favorite seasoning, and cover the avocado with more cheese. Close the waffle iron, and let that cook for at least 1 minute.
3. Bring It All Together: Now, assemble your masterpiece – a stack of avocado chaffles topped with Gardein’s Meatless Chick’n Tenders, sliced. Drizzle with Chili Crunch Hot Honey (optional, but highly recommended).

Meatless Chick’n and Chaffles
Ingredients
- 4 meatless chick'n tenders (Gardein Brand)
- 2 avocados
- 1 cup shredded cheese
- 1 tsp creole seasoning (if not available, use your favorite seasoning)
- 2 tbsp chili crunch hot honey
Instructions
- Pre-heat waffle maker, and air-fryer at 375F
- Prep the grated cheese and avocado and your chosen seasoning.
- Add the chick'n tenders. Air-fry for 13-18 minutes. While your chick'n are cooking, make the chaffles.
- Sprinkle shredded cheese in the waffle iron, add half an avocado, season and cover with cheese. Close and cook for at least 1 minute
- Repeat the process until you've used up all the cheese and avocado, you should have 4 chaffles at the end.
- Each avocado chaffle should be topped with one chicken tender that has been sliced.
- Drizzle your dish with Chili Crunch Hot Honey and enjoy. This step is optional, but highly recommended.
