Spicy garlic butter shrimp

Perfect for meal prep, this dish combines succulent shrimp with a kick of sriracha and savory Japanese BBQ sauce.

- 1 lb shrimp head off, tail on, deveined
- 3 tbsp butter
- 4 garlic minced
- 2 scallion (green and white) chopped
- 1-2 tbsp sriracha
- 2-3 tbsp Spicy Japanese Barbecue Sauce (Bachan brand)
- creole seasoning if needed
Start by patting the shrimp dry with a paper towel. This helps them sear nicely in the pan.
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic.
Increase the heat to medium-high and add the scallion and shrimp to the skillet. Cook for 2-3 minutes on each side, until they turn pink and opaque.
Stir in the sriracha and spicy Japanese barbecue sauce, coating the shrimp evenly. Cook for another 1-2 minutes, allowing the flavors to meld together. Sprinkle creole seasoning if needed.
Remove the skillet from heat and sprinkle the chopped scallions over the shrimp.
Serve the spicy butter garlic shrimp over a bed of cooked rice. Garnish with extra scallions or a squeeze of lime if desired.
