Spicy garlic butter shrimp

Perfect for meal prep, this dish combines succulent shrimp with a kick of sriracha and savory Japanese BBQ sauce.

Ingredients
  

  • 1 lb shrimp head off, tail on, deveined
  • 3 tbsp butter
  • 4 garlic minced
  • 2 scallion (green and white) chopped
  • 1-2 tbsp sriracha
  • 2-3 tbsp Spicy Japanese Barbecue Sauce (Bachan brand)
  • creole seasoning if needed

serve with

  • 4 cups cooked white rice

Instructions
 

  • Start by patting the shrimp dry with a paper towel. This helps them sear nicely in the pan.
  • In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic.
  • Increase the heat to medium-high and add the scallion and shrimp to the skillet. Cook for 2-3 minutes on each side, until they turn pink and opaque.
  • Stir in the sriracha and spicy Japanese barbecue sauce, coating the shrimp evenly. Cook for another 1-2 minutes, allowing the flavors to meld together. Sprinkle creole seasoning if needed.
  • Remove the skillet from heat and sprinkle the chopped scallions over the shrimp.
  • Serve the spicy butter garlic shrimp over a bed of cooked rice. Garnish with extra scallions or a squeeze of lime if desired.
