Ingredients
  

  • 7 oz vermicelli noodles (soaked)
  • 8 oz pancit canton noodles
  • 2 cups bone broth (or any broth)
  • 1 lb shrimp (peeled and deveined)
  • 1/4 cup soy sauce
  • 1/4 cup oyster sauce
  • 1 medium carrot (julienned)
  • 1/2 medium green cabbage (shredded)
  • 1 cup green beans (trimmed and cut)
  • 5 cloves garlic (minced)
  • 1/2 small red onion
  • salt and pepper
  • calamansi or lime wedges

Instructions
 

  • Soak the vermicelli noodles in water for 10–15 minutes, then drain and set aside.
  • In a large wok over medium heat, sauté the garlic and onion until fragrant. Add the shrimp, season with salt and pepper, and cook until they turn just pink.
  • Then, add the bone broth and bring to a gentle simmer. Remove the shrimp and set aside to prevent overcooking.
  • Next, add the carrots and green beans to the wok and cook for 2-3 minutes, allowing the mixture to continue simmering.
  • Add the soaked vermicelli noodles and pancit canton noodles, letting them soak up the broth. Next, add the cabbage, soy sauce, and oyster sauce. Toss everything carefully, being careful not to break the noodles.
  • Return the cooked shrimp to the wok and toss gently to combine. Adjust the seasoning with additional salt and pepper to taste.
  • Serve warm, garnished with calamansi or lime wedges if desired. Enjoy with warm pandesal, if you like!

Pro Tips for Perfect Shrimp Pancit

  • Don't overcook the shrimp. Sauté until just pink, then remove and add back in at the end to stay juicy.
  • Soak bihon separately. This helps maintain a balanced texture between the two noodle types.
