Ingredients
  

  • 2 tbsp tom yum paste
  • 1 cup water
  • 6 oz shrimp (peeled and deveined)
  • 6 wonton wrappers
  • 1/2 cup spinach
  • 1/4 cup coconut milk

Optional: green onions for garnish, and lime.

Instructions
 

  • Bring 1 cup of water to a gentle simmer.
  • Add coconut milk, and stir in tom yum paste until dissolved.
  • Add shrimp and cook for 2 to 3 minutes until pink and opaque.
  • Add wonton wrappers directly into the soup and simmer for another 3 to 4 minutes.
  • Add spinach, let it wilt.
  • Taste and adjust seasoning. Garnish with optional toppings and serve hot.
