
Tofu Rice Cooker Bibimbap

Ingredients
For the Bibimbap:
- 1 cup RiceSelect Royal Blend Rice
- 1.5 cups water
- 1 block of firm tofu, pressed and cubed
- 1 small zucchini, cubed
- 1 small carrot, julienned
- 1 cup bean sprouts
- 1 cup spinach
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp gochugaru (Korean red pepper flakes)
- Fried egg (per serving)
For the Bibimbap Sauce:
- 2 tbsp gochujang (Korean chili paste)
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp rice vinegar
- 1 tsp honey or agave syrup
- 2-3 clove garlic, minced

Instructions
- Rinse the rice: Rinse 1 cup of RiceSelect Royal Blend Rice under cold water until the water runs clear. Add the rice and water to the rice cooker.
- Add the tofu and veggies: On top of the rice, place your carrot, zucchini, bean sprouts, and cubed tofu in an even layer.
- Season: Drizzle soy sauce, sesame oil, and a sprinkle of gochugaru over the tofu and veggies for extra flavor.
- Cook everything together: Close the rice cooker lid and set it to rice cooking mode (10-12 minutes).
- Prepare the bibimbap sauce: While the rice and toppings are cooking, mix all the ingredients for the bibimbap sauce in a small bowl: gochujang, soy sauce, sesame oil, rice vinegar, honey, and minced garlic.
- Assemble the bibimbap: Once the rice, tofu, and veggies are done cooking, drizzle half of the Bibimbap sauce, add the spinach, and mix it all.
- Time to serve: Serve it in bowls, drizzle it with the bibimbap sauce, add kimchi, and top it with a fried egg if desired.
Here are 4 tips for making the perfect tofu bibimbap in a rice cooker:
1. Press your tofu: Before cooking, press your tofu for at least 10-15 minutes to remove excess moisture. This helps it absorb the seasonings better and gives it a firmer texture when cooked.
2. Layer ingredients evenly: When adding tofu and vegetables on top of the rice in the rice cooker, layer them evenly. This ensures everything cooks at the same rate and distributes the flavors uniformly.
3. Don’t skip the sauce: The bibimbap sauce is critical to achieving authentic flavor. Adjust the heat level by adding more or less gochujang to suit your preference.
4. Customize with toppings: Add toppings like kimchi, sesame seeds, or pickled radish for extra texture and flavor when serving. You can also swap in your favorite seasonal vegetables.
