
Crispy Shrimp Balls

These shrimp balls are not just about taste but also about texture. The contrast between the crispy wonton shell and the soft, juicy shrimp filling is a textural delight that will have you reaching for another one (and another and another).
Ingredients:
- 25 pieces of shrimp, peeled and deveined
- 1 tablespoon cornstarch
- Creole seasoning
- 4 cloves garlic
- 4-5 pieces of green onion, cut into small strips
- 1 tbsp oyster sauce
- 1 tsp soy sauce
- 15 wonton wrappers, cut into thin, length strips
- Vegetable oil for frying
- Dipping sauce: Sweet Thai Chili Sauce
Instructions:
- In a food processor, pulse the shrimp, cornstarch, creole seasoning, garlic, and scallions until a paste forms.
- Scoop out about 1 tablespoon of the shrimp paste and roll it into a ball.
- Roll the shrimp ball in the wonton strips until it is completely covered.
- Repeat steps above (2 & 3) with the remaining shrimp paste and wonton strips.
- Make sure to heat the oil in a wok or deep fryer to 350F degrees (175 degrees C).
- Carefully fry the shrimp balls in batches until they are golden brown and crispy, about 2-3 minutes per batch.
- Drain the shrimp balls on paper towels or wire tray
- Serve immediately with sweet Thai chili sauce.
Here are a few tips for making the perfect crispy shrimp balls:
- Use fresh shrimp for the best texture and flavor.
- If you don’t have a food processor, you can chop the shrimp very finely by hand.
- Ensure the shrimp paste is dry enough, or the wonton strips will stick to it.
- Don’t overcrowd the wok or deep fryer when frying the shrimp balls.
- Mince or pulse shrimp very finely so the balls will be smooth and even.
- Don’t overmix the shrimp paste, or it will become tough.
- Use wonton wrappers that are thin and pliable; if not available, use eggroll wrappers.
- Cut the wonton wrappers into strips.
- Roll the shrimp balls tightly in the wonton strips so they don’t fall apart when frying.
- Double-fry the shrimp balls in hot oil until golden brown and crispy for extra crispiness.
- Serve immediately with your favorite dipping sauce.
