Vermicelli Shrimp Bowl: The Healthy and Delicious Way to Enjoy Shrimp

This Vietnamese-inspired shrimp vermicelli bowl is a delicious and healthy meal perfect for a light lunch or dinner. The bowl is versatile, and the sauce is so flavorful.

Ingredients
  

Shrimp and Vegetables

  • 12 Extra large shrimp
  • Salt & pepper
  • 3 cups Lettuce, chopped
  • 1 large Cucumber, sliced
  • 1 cup Carrots, julienne
  • 1 38g Rice Vermicelli noodles (Split to 2 servings)

Nước chấm

  • 1/2 cup Water
  • 2-3 tbsp Brown sugar substitute (Lakanto brand) (feel free to use reg sugar or brown sugar)
  • 1-2 tbsp Lime juice (start with 1 tbsp, and adjust to your liking)
  • 1-2 tbsp Fish sauce
  • 2 cloves Garlic, minced
  • Sprinkle red chili flakes (bird's eye chili or Thai chili is preferred)

Instructions
 

How to steam shrimp

  • Season shrimp with salt & pepper
  • Add water to the pot. Then add your steamer insert to the pot.
  • Cover and bring water to a boil over high heat. 
  • Then, reduce heat to medium and add Shrimp.
  • Steam the Shrimp for 5-7 minutes or until the shrimp curl and turn bright pink.

How to make Nước chấm

  • Combine fish sauce, your choice of sugar, and water in the skillet. Bring to a simmer and then remove from heat.
  • Let it cool, then add garlic, lime juice, and red chili flakes.

Assemble the Bowl:

  • Cook your rice noodle choice according to the package (set aside).
  • Prep the vegetables, cut the cucumber, chop the lettuce, and julienne the carrots. 
  • To assemble the bowl, add chopped lettuce, cucumber slices, carrots, noodles, and Shrimp, and drizzle Nước chấm and serve immediately.
