Ingredients
  

  • 8 oz Argentinian Shrimp
  • 1 tbsp butter
  • 1/4 cup roasted corn
  • 1/4 onion thinly sliced
  • 1 tsp red miso paste
  • 2 tsp soy sauce
  • 1/2 tsp mirin
  • 2-3 cloves garlic minced
  • 150 g udon noodles fresh or frozen
  • green onions for garnish
  • sesame seeds for garnish

Instructions
 

  • Bring a pot of water to a boil and cook udon noodles according to package instructions. If using frozen udon, boil for about 2 minutes until soft and chewy. Drain and set aside.
  • In a small bowl, whisk together the miso paste, soy sauce, and mirin until smooth. Set aside.
  • In a large nonstick pan or skillet, melt butter over medium heat. Add sliced onion and sauté until slightly softened.
  • Place the cooked udon in the center of the pan, then arrange the shrimp around the noodles. Add the roasted corn. Top the noodles with a small pat of butter and drizzle the miso sauce over everything.
  • Cook for about 2–3 minutes per side, allowing the shrimp to turn pink and the noodles to absorb the sauce.
  • Toss the shrimp, noodles, and corn together until everything is evenly coated in the miso garlic butter sauce.
  • Transfer to a serving bowl and top with chopped green onions and sesame seeds. Serve immediately while hot and glossy.
