Shrimp Fajitas

Shrimp fajitas are a delicious and easy way to enjoy all the flavors of Tex-Mex cuisine. With tender shrimp, grilled vegetables, and your favorite toppings, shrimp fajitas will surely please everyone at the table.

- 1 lb Shrimp (peeled, tail on and deveined)
- 1/2 cup Chopped onion
- 1 cup Bell pepper
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1/4 cup cilantro
- 6 tortillas
Toppings Ideas:
- Guacamole
- Mango pico de gallo
- sour cream
- salsa
Add shrimp, onion, bell peppers, chili powder, cumin, salt, and pepper in a ziplock bag or bowl. Marinate for at least 30 minutes.
When ready to serve, add olive oil over medium heat on a griddle or flat-top grill. Add the shrimp fajita mixture. Mix until the shrimp are cooked, and the vegetables are softened for about 5-7 minutes.
Remove the shrimp mixture from the heat and stir in the cilantro.
Warm the tortillas on a griddle.
To assemble the fajitas, place a portion of the shrimp mixture in a tortilla (remove the tail from the shrimp) and top with your favorite toppings. (Guacamole recipe) or (Mango pico de gallo recipe)
Fold the tortilla in half and enjoy!

Tips
- For a spicier fajita, add a jalapeño pepper to the vegetables.
- For a vegetarian version, omit the shrimp and add more vegetables to the fajita.
- Serve the fajitas with your favorite rice and beans.
