These high-protein Kodiak pancakes are fluffy, delicious, and packed with 34g of protein per serving—no protein powder needed! Made with Kodiak Cakes mix, Fairlife milk, and egg whites, then topped with fresh strawberries & creamy pistachio butter for the ultimate healthy breakfast. Perfect for meal prep and busy mornings!

Ingredients
  

  • 3/4 cup Kodiak Cakes pancake mix
  • 1/2 cup Fairlife milk
  • 6 tbsp egg whites
  • 1/2 tsp vanilla extract
  • cooking spray

Toppings:

  • 1 tbsp Pistachio Butter (Campo d’Oro brand)
  • 3-4 Fresh strawberries sliced

Instructions
 

  • Mix the batter – Whisk together Kodiak Cakes mix, Fairlife milk, and egg whites until smooth. Let it sit for 2-3 minutes for fluffier pancakes.
  • Cook the pancakes – Heat a nonstick pan over medium heat and lightly spray with cooking spray. Pour the batter to make 3-4 medium pancakes. Cook for 2 minutes per side, or until golden brown.
  • Add toppings – Stack your pancakes and spread with Campo d’Oro Pistachio Butter in between each stacks. Drizzel the rest of pistachio butter and add fresh strawberries on top.
  • Enjoy!

Notes

Pro Tip: Pre-portion your pistachio butter in small containers and store sliced strawberries in the fridge for a quick meal prep breakfast!
