Crispy Cod Wrap

Ingredients
  

  • 2 carb balance tortillas (or your favorite)
  • 6 oz cod fillet (cut in half)
  • 1 tbsp mayonnaise with lime
  • 2 tbsp panko
  • 1 tsp creole seasoning

Mango Salsa

  • 1/2 ripe mango
  • 3 tbsp red onion
  • 1 medium sized tomato (deseeded)
  • chili lime seasoning

Instructions
 

For Crispy Code

  • Preheat your air fryer to 375°F
  • Spread mayonnaise with lime on the cod fillet halves
  • Dip each cod fillet into the panko breadcrumbs and creole seasoning, pressing gently to coat both sides.
  • Place the coated cod fillets in the air fryer basket in a single layer.
  • Air fry for about 10-12 minutes or until the cod is golden brown and cooked through, flipping halfway through for even crispiness.

For Mango Salsa

  • Combine the diced mango, chopped red onion, and diced tomato in a bowl.
  • Sprinkle chili lime seasoning over the mixture and toss gently to combine.
  • If desired, add fresh chopped cilantro for an extra burst of flavor.

Wraps

  • Once your crispy cod and mango salsa are ready, it's time to assemble the wraps! Toast the tortillas and then place a generous amount of shredded lettuce on each tortilla. Next, add a crispy cod fillet, slices of creamy avocado, and a spoonful of the refreshing mango salsa. Roll up the wraps.
