Crispy Cod Wrap

- 2 carb balance tortillas (or your favorite)
- 6 oz cod fillet (cut in half)
- 1 tbsp mayonnaise with lime
- 2 tbsp panko
- 1 tsp creole seasoning
Mango Salsa
- 1/2 ripe mango
- 3 tbsp red onion
- 1 medium sized tomato (deseeded)
- chili lime seasoning
For Crispy Code
Preheat your air fryer to 375°F
Spread mayonnaise with lime on the cod fillet halves
Dip each cod fillet into the panko breadcrumbs and creole seasoning, pressing gently to coat both sides.
Place the coated cod fillets in the air fryer basket in a single layer.
Air fry for about 10-12 minutes or until the cod is golden brown and cooked through, flipping halfway through for even crispiness.
For Mango Salsa
Combine the diced mango, chopped red onion, and diced tomato in a bowl.
Sprinkle chili lime seasoning over the mixture and toss gently to combine.
If desired, add fresh chopped cilantro for an extra burst of flavor.
Wraps
Once your crispy cod and mango salsa are ready, it's time to assemble the wraps! Toast the tortillas and then place a generous amount of shredded lettuce on each tortilla. Next, add a crispy cod fillet, slices of creamy avocado, and a spoonful of the refreshing mango salsa. Roll up the wraps.
