Chewy Ube Mochi Cake Recipe – Easy Filipino-Inspired Dessert

Ingredients
  

  • 1 box TJ's mochi cake mix
  • 2 eggs
  • 1 can coconut milk (13.5 oz)
  • 1/2 cup melted butter (or coconut oil)
  • 1/2 cup ube halaya (ube jam)
  • 1/2 tsp ube extract

optional: 1-2 tbsp sugar if prefer a sweeter cake)

Instructions
 

  • Preheat your oven to 350°F and grease a 9x9-inch baking pan
  • In a large mixing bowl, whisk together:
    Eggs, Coconut milk, Melted butter, Ube halaya, Ube extract
  • Slowly stir in the Trader Joe’s Mochi Cake Mix, mixing until smooth and lump-free.
  • Pour the batter into your greased baking pan. Bake for 40-50 minutes until the edges turn golden brown and a toothpick inserted in the center comes out clean.
  • Let the cake cool completely before slicing—this allows the mochi cake to set and become perfectly chewy!

  • For longer storage, refrigerate for up to 5 days and microwave for 10-15 seconds before serving to restore the chewy texture.
