For the base
- 1 bag frozen cauliflower vegetable medley good and gather brand, Target
- creole seasoning
For the tuna
- 2 cans tuna drained
- 1/4 cup mayonnaise
- 2 tbsp red onion
- lemon pepper seasoning
Toppings before baking
- 1 tbsp mayonnaise
- 2 tbsp Japanese hot & spicy BBQ sauce trybachan brand
- Furikake seasoning
Serve with
- 1 cucumber
- 2 packs of nori sheets
Pre-heat your Air-fryer to 375°F (190°C) or oven (cooking will vary for both, see below).
In a skillet, add the frozen cauliflower vegetable medley—sautee until thawed (about 2-3 minutes). Season with creole seasoning. Cook for another 4-5 minutes. Set aside.
In a bowl, mix the drained tuna, red onion, mayonnaise, lemon pepper seasoning, and mix. This will be your flavorful tuna toppings. Set aside.
Divide the cauliflower mixture into two oven-safe containers for meal prepping. Divide the tuna mixture, and layer the tuna mixture on top of each container. Add a little mayo, hot and spicy BBQ sauce, and sprinkle furikake.
Bake in the pre-heated oven (15-18 minutes) or air-fryer for about 8-10 minutes or until the edges are golden brown.
Once out of the oven, serve each with 1/2 cucumber, sliced. And one pack of Nori sheets.

- Prepare the Tuna Mixture:
Make the tuna mixture beforehand, and store it in an airtight container in the refrigerator.
- Store before Baking:
Suppose you want to avoid baking it ahead of time. Layer the cauliflower, tuna, mayo, and hot and spicy BBQ sauce in your baking dish. Store it in the refrigerator until you can pop it in the oven or air fryer. Finish with furikake after baking.
- Microwave before enjoying:
If you are storing baked sushi and not enjoying it immediately, warm it up in the microwave when ready to enjoy!
