Budget-Friendly Shrimp Eggrolls

Are you craving some crispy, crunchy, and delicious shrimp eggrolls? With this easy recipe, you can make shrimp eggrolls for a fraction of the cost of buying them from a restaurant.

Ingredients
  

  • 12 pieces cooked or uncooked shrimp
  • 6 eggroll wrappers (square shape, cut in half)
  • Creole seasoning (if not available see seasoning below)
  • Vegetable oil (for frying)
  • 3 tbsp water (to help seal the eggrolls)

Creole seasoning alternative: salt, black pepper, onion, and garlic powder.

Dipping sauce

  • 2 tbsp sriracha
  • 2 tbsp mayo
  • 1 tbsp sweet Thai chili sauce
  • pinch Salt & pepper

Instructions
 

  • In a medium bowl, combine the shrimp and creole seasoning. Toss until well seasoned.
  • Grab six eggroll wrappers and cut them in half evenly in size. 
  • Place water in a small bowl.
  • Place one egg roll wrapper on a flat surface. Add the shrimp with the tail out, and roll the wrapper around the shrimp from the bottom up, leaving 1/2 an inch for water to help seal the eggroll (tightly). 
  • Brush the edges of the wrapper with water. 
  • Repeat steps 4 and 5 with the remaining wrappers and shrimp.
  • Heat the vegetable oil in a large skillet over parchment paper medium heat.
  • Fry the eggrolls in batches until golden brown and crispy, about 2-3 minutes per side. 
  • Prepare the sauce at this time. Mix all the sauce ingredients in a bowl and keep in the refrigerator until ready to serve. 
  • Drain the eggrolls on paper towels once done frying.
  • Serve warm with the dipping sauce or any of your favorite condiments.

Notes

Tips:
  • For a crispier eggroll, fry them in batches in hot oil.
  • To prevent the eggrolls from sticking together, fry them in batches and place them on a wire rack to drain.
  • Serve warm eggrolls with your favorite dipping sauce, such as soy sauce, peanut sauce, or sweet and sour sauce.
  • Serve them with lettuce for a refreshing twist to the meal.
