This air-fried tortellini Caesar salad with smoked salmon is crispy, creamy, and high-protein. An easy, flavorful meal ready in under 30 minutes.

Ingredients
  

  • 1 cup cheese and spinach tortellini (TJ Brand)
  • Water + salt (For boiling)
  • 1/4 cup grated Parmesan cheese
  • 2 cups romaine lettuce or Caesar salad kit
  • 2 tbsp Caesar dressing
  • 2 oz smoked salmon (chopped)

Optional

  • black pepper
  • lemon

Instructions
 

  • Bring a pot of salted water to a boil, then cook the tortellini according to package instructions. Drain and let it cool slightly.
    Tip: Pat the tortellini lightly to dry for better crisping.
  • Toss the cooked tortellini with grated Parmesan cheese.
    Air fry at 375°F for 15 to 20 minutes, shaking halfway through, until golden and crispy. Time may vary depending on your air fryer and tortellini brand.
    This creates a crispy texture similar to croutons.
  • In a large bowl, add chopped romaine and a sprinkle of parmesan cheese.
  • Chop the smoked salmon into bite-sized pieces.
    No cooking is needed. Add directly to the salad for an easy protein boost.
  • Add the crispy tortellini to the salad, along with the smoked salmon.
    Toss gently. Finish with extra parmesan, black pepper, or a squeeze of lemon if desired.
