Easy Mochi Brownies

Mochi brownies are the perfect dessert for anyone who loves the chewy texture of mochi and the rich chocolate flavor of brownies.

Ingredients
  

  • 1 box sugar-free brownie mix (pillsbury brand)
  • 3 tbsp water
  • 1/3 cup butter, melted

Mochi mixture

  • 3/4 cup mochiko flour (or glutinous rice flour of your choice)
  • 1/3 cup monk fruit (lakanto brand)
  • pinch of salt
  • 3/4 cup hot water
  • cooking spray (for the muffin top tray)

Instructions
 

  • Preheat oven at 350F 
  • Start by combining mochiko flour, monk fruit sugar sub, and salt in a bowl. Slowly add the hot water and mix until well combined. Cover the mochi mixture with a saran wrap, and microwave for 30 seconds. Mix and microwave for another 30 seconds to 1 minute until you get a sticky consistency.
  • In a separate bowl, add the brownie mix, water, melted butter, and egg.
  • Spray each muffin top circle with cooking spray. Scoop brownie batter on each circle, and then add 1 tbsp of mochi mixture to each batter. Add more brownie batter to cover the mochi completely. This should make 12 brownie bites.
  • Bake the mochi brownies for 18-20 minutes or until a toothpick inserted into the center comes clean.
  • Enjoy!
