Meatless Picadillo (Filipino Style)

This dish is the Filipino version of Picadillo. It is typically cooked with ground pork. I had to make it meatless, and it is super delicious.

Ingredients
  

  • 12 oz Impossible ground "meat"
  • 4 oz Hot tomato sauce (or regular tomato sauce)
  • 100 grams Green bell pepper
  • 100 grams Red bell pepper
  • 2 medium Pre-boiled Potatoes
  • 50 grams Red onion
  • 2 cloves Garlic
  • 2 tbsp Fish sauce
  • Cooking spray

Instructions
 

  • Chop the onion and mince the garlic
  • Wash the bell peppers, pat dry and diced
  • Cube the pre-boiled potatoes
  • In a hot skillet, spray cooking oil, add the impossible meat and cook for about 3 minutes
  • Add the onion and garlic and mix well for about 1 minute
  • Add the potatoes, hot tomato sauce, and start with 1 tbsp of fish sauce, Mix and cook for about 4 minutes
  • At this point give it a taste, add the red and green bell peppers. You can add 1 tbsp of fish sauce if needed, Mix and continue to cook for about 5-7 minutes.
  • Serve immediately and enjoy it over rice.
