Budget-Friendly Shrimp Eggrolls

Are you craving some crispy, crunchy, and delicious shrimp eggrolls? With this easy recipe, you can make shrimp eggrolls for a fraction of the cost of buying them from a restaurant.

Storytime: My family and I recently visited a new restaurant in Manteca, and their shrimp eggrolls cost so much. They were the same size as the ones you see here, four pieces for $10. So, when I went to our local grocery store, I wanted to see how many shrimp eggrolls I could make with just $10. I made 12 shrimp eggrolls, which tasted so delicious that it took less than 10 minutes to prep. 

Grocery store prices may vary for different locations:

  • Egg roll wrappers $3.99 (for 20 pieces)
  • Cooked shrimp $5.70 (for 12 pieces)

FYI: I prefer to use uncooked shrimp but for budget purposes. It was fantastic with the cooked shrimp, perfectly juicy, with every bite with a crunchy outcome.

Snacks or Appetizers:

Here are some reasons shrimp eggrolls are an excellent dish for a casual get-together or party:

  • They are versatile, and you can serve them as an appetizer, snack, or main course. 
  • They are easy to make and can be prepared ahead of time.
  • They are affordable and a great option for parties on a budget.
  • They are a crowd-pleaser and enjoyed by people of all ages.

  • This makes them an excellent option for parties with various dietary needs.

Here’s what you’ll need (makes 12)

  • 1/2 pound shrimp, peeled and deveined (12 pieces, cooked or uncooked shrimp)
  • 6 eggroll wrappers (cut in half)
  • Creole seasoning (if not available, try seasoning below)
  • Vegetable oil for frying
  • 3 tbsp water (to help seal the eggroll wrappers)

Dipping sauce:

  • Sriracha
  • Mayo
  • Sweet Thai Chili Sauce
  • Salt and Pepper

Creole seasoning alternative: salt, black pepper, onion, and garlic powder.

Instructions:

  1. In a medium bowl, combine the shrimp and creole seasoning. Toss until well seasoned.
  2. Grab six eggroll wrappers and cut them in half evenly in size. 
  3. Place water in a small bowl.
  4. Place one egg roll wrapper on a flat surface. Add the shrimp with the tail out, and roll the wrapper around the shrimp from the bottom up, leaving 1/2 an inch for water to help seal the eggroll (tightly). 
  5. Brush the edges of the wrapper with water. 
  6. Repeat steps 4 and 5 with the remaining wrappers and shrimp.
  7. Heat the vegetable oil in a large skillet over parchment paper medium heat.
  8. Fry the eggrolls in batches until golden brown and crispy, about 2-3 minutes per side. 
  9. Prepare the sauce at this time. Mix all the sauce ingredients in a bowl and keep in the refrigerator until ready to serve. 
  10. Drain the eggrolls on paper towels once done frying.
  11. Serve warm with the dipping sauce or any of your favorite condiments.

Tips:

  • For a crispier eggroll, fry them in batches in hot oil.
  • Frying food with parchment paper makes the frying pan easy to clean, as the food will not burn and stick to the pan.
  • To prevent the eggrolls from sticking together, fry them in batches and place them on a wire rack to drain.
  • Serve warm eggrolls with your favorite dipping sauce, such as soy sauce, peanut sauce, or sweet and sour sauce.
  • Serve them with lettuce for a refreshing twist to the meal.

If you are not a fan of shrimp, you can try these options:

  1. Chicken eggrolls are very popular, using shredded chicken, vegetables, and spices.
  2. Vegetable eggrolls are also very delicious. It is loaded with various vegetables such as cabbage, carrots, mushrooms, etc.
  3. Pork or beef eggrolls, using ground meats with spices and vegetables.
  4. Sweet eggrolls: There’s a Filipino dessert called turon, filled with banana, jackfruit, and sugar and fried to perfection!

You can also experiment with different flavors and ingredients to create unique eggroll variations. For example, you could add cheese, bacon, or other meats to your filling. You could also use different types of vegetables, such as broccoli, spinach, or zucchini. The possibilities are endless!

No matter what filling you choose, make sure to fry your eggrolls until they are golden brown and crispy. This will ensure that they are cooked through and have a delicious texture. Serve them hot with your favorite dipping sauce, and enjoy!

    1. My husband loves eggrolls. Our Japanese neighbor, who we have adopted as our grandma, makes him big batches and we freeze them until he’s ready to cook them. I’ve never tried to make them, but I think I’m going to try with thisr recipe. They look amazing!
