
Spicy Salmon Poke Bowl
The salmon poke bowl is a delicious and healthy meal perfect for summer. It’s easy to make at home and will indeed become a new favorite. This poke bowl has fresh salmon, rice, vegetables, and a spicy and flavorful marinade. It’s perfect for a light lunch or dinner.
What is poke salmon?
Poke salmon is a Hawaiian dish made with fresh salmon, rice, vegetables, and a flavorful marinade. It is typically served in a bowl, with the salmon on top of the rice and other toppings like vegetables.
The salmon for poke is typically cut into small cubes and marinated in a mixture of soy sauce, sesame oil, rice vinegar, and other seasonings. The marinade can be simple or complex, depending on the desired flavor profile.
For this recipe, I made it slightly spicy with a simple mixture of sriracha mayo.
What toppings are appropriate for poke?
The vegetables that are typically added to poke salmon include avocado, cucumber, onions, and seaweed. Other popular toppings include tobiko (flying fish roe), masago (capelin roe), and furikake (a Japanese seasoning).
The great thing about this bowl is that it is very versatile to your liking. I have seen poke bowls served with mango and other fruits.
Why poke bowls?
There are so many reasons why I love poke bowls; here are my whys:
- It is delicious and somewhat healthy. They are prepared with fresh ingredients and packed with a good source of protein, fish.
- Poke bowls are customizable to fit your cravings. You can choose different types of fish (see my AHI POKE RECIPE HERE).
- It is super convenient to make because it is easy to make and can be portable and enjoyed to go.
- I love how colorful and visually appealing poke bowls are.
Ingredients:
- 8 oz sashimi-grade salmon (small/med-size cubes).
- 2-3 tbsp mayo
- 2-3 Tbsp sriracha, depending on your spice level here
- Green onion
- Pinch of salt (or soy sauce)
- 1 Tbsp Tobiko
- Drizzle Sesame oil
Poke bowl:
- 1 cup brown rice (Sprinkle furikake seasoning)
- 4 oz spicy salmon poke
- 1/2 cup edamame
- 1/2 med/large cucumber
- Wonton strips
- Sesame seeds
- Tobiko (optional)
Directions:
- Start by cooking the rice according to the package directions.
- While the rice is cooking, prepare the salmon. Dice the salmon into small cubes and place it in a bowl. Add mayo, sriracha, green onions, sesame oil, and tobiko. Cover and refrigerate for at least 30 minutes or up to overnight.
- Prepare the vegetables, cut the cucumber, and set aside. If using frozen edamame, follow the packaging directions.
- When you’re ready to serve, assemble your poke bowls.
- In each bowl, add a scoop of rice, 1/2 of the spicy salmon, cucumber slices, wonton strips, sprinkle sesame seeds, and tobiko (optional but recommended).
- Top with a drizzle of sesame oil, and enjoy!
Here are some additional tips for making the perfect salmon poke bowl:
- Use sushi-grade salmon for the best flavor and texture.
- If you are not a fan of raw salmon, marinate it and cook it until it’s opaque.
- Get creative with your toppings! Some popular options include avocado, cucumber, edamame, seaweed salad, and tobiko.
- Not a fan of spicy, marinate salmon with soy sauce and sesame oil.
- Vegetarian poke bowl: Tofu and edamame are excellent protein sources and can be marinated in various flavors to create a delicious poke bowl. Some popular vegetarian poke marinades include soy sauce, sesame oil, ginger, garlic, and rice vinegar.
