- Extra large Shrimp, peeled and deveined
- Salt & black pepper
- Chopped lettuce
- Carrots julienne
- Cucumber slices
- Vermicelli or any rice noodles
Here’s my version of Nước chấm, which is non-traditional.
- Water
- Brown sugar substitute (or regular sugar) LAKANTO 15%OFF (Code: Melshealthybowl)
- Garlic, minced
- Fish sauce
- Lime juice
- Red chili flakes (I know traditionally it’s with bird’s eye chili, but I checked out three stores near me and could not find any).
Instructions:
How to Steam Shrimp
- Add water to the pot. Then add your steamer insert to the pot.
- Cover and bring water to a boil over high heat.
- Then, reduce heat to medium and add Shrimp.
- Steam the Shrimp for 5-7 minutes or until the shrimp curl and turn bright pink.
How to make Nước chấm
- Combine fish sauce, your choice of sugar, and water in the skillet. Bring to a simmer and then remove from heat.
- Let it cool, then add garlic, lime juice, and red chili flakes.
Assemble the Bowl:
- Cook your rice noodle choice according to the package (set aside).
- Prep the vegetables, cut the cucumber, chop the lettuce, and julienne the carrots.
- To assemble the bowl, add chopped lettuce, cucumber slices, carrots, noodles, and Shrimp, and drizzle Nước chấm and serve immediately.
Tips:
- If you don’t have chili flakes, omit them or add cayenne pepper for some heat.
- Serve with additional lime wedges for garnish.
I consulted my Vietnamese friend Bao about the difference between Nước chấm and Nước mam. He said Nước mam is the pure fish sauce, while Nước chấm is the fish sauce mixed with citrus, sugar, garlic, and chili. And I quote, “Nước chấm on everything.” He also said Nước means water/liquid, and chấm means dipping.

- 1 cup Carrots, julienne
- 1 38g Rice Vermicelli noodles (Split to 2 servings)
Nước chấm
- 1/2 cup Water
- 2-3 tbsp Brown sugar substitute (Lakanto brand) (feel free to use reg sugar or brown sugar)
- 1-2 tbsp Lime juice (start with 1 tbsp, and adjust to your liking)
- 1-2 tbsp Fish sauce
- 2 cloves Garlic, minced
- Sprinkle red chili flakes (bird's eye chili or Thai chili is preferred)
