There is nothing like freshly baked bread. But I know what you are thinking; it takes too long to bake it from scratch. So, yes and no, the bread mix I used for this recipe can be prepped in two ways—one with yeast and one without. But this recipe will be the easiest way to bake delicious bread in no time. And this is also low-carb.
What, low-carb bread?
Yes, you’ve heard that right! For this recipe, I used Lakanto’s bread mix. If you are unfamiliar with this brand, here’s a brief description of why I love this brand so much. They are known for their sugar alternative, monk fruit sweetener. They have so many products to choose from now, and I am super excited to share this bread mix with you because they are delicious, and even the simplest bread-making method tasted terrific!

Quick Bread Ingredients:
The great thing about this bread mix is that it gives you instructions on what you will need to bake yeasted bread or quick bread. Quick and easy is the way to go, and here are the ingredients:
-1 pack Lakanto bread mix (12oz)
-3/4 cup water
-3 eggs
-1/4 cup vegetable oil
Simple as 1, 2, 3. I first added the wet ingredients to a bowl and mixed in the bread mix.
Make It Your Own:
I wanted to create a small bite-size snack I could grab on the go, so I opted to use my mini bundt cake tray. If you do not have this mold, you can make a ball with your hands. I also stuffed each bread with marinated mozzarella pearls (cheesy goodness) for this recipe.

-18-20 mozzarella pearls (regular or marinated)

Mini Bundt Bread Cheese Bombs
Ingredients
Bread Mixture
- 1 pack Lakanto bread mix
- 3/4 cup Water
- 3 Eggs
- 1/4 cup oil
Toppings & Stuffing
- Everything bagel seasoning
- 18-20 Mozzarella pearls (regular or marinated)
- Cream cheese (optional, for serving)
Instructions
Bread
- In a bowl, combine water, eggs, and oil
- Slowly add the bread mix to the wet ingredients, and stir
- Grease the mini Bundt cake pan
- Sprinkle everything bagel seasoning on each mini Bundt cup
- Add a thin layer of bread mixture into the mini Bundt cup, add a mozzarella pearl, then top again with the bread mixture
- Repeat until you have 18-20 mini Bundt cheese bombs
- Bake at 350F for about 30-35 minutes
- Halfway through, check if cheese oozes out (use a spoon to tuck it back into the mini Bundt cake molds)
- Enjoy by itself or cream cheese
